More Of Dad's Recipes

A few more recipes that I found on the floppy. These three are some of my favorite foods and the last one of these is one of my favorite ways to eat deer meat. Yum. Gotta love my Dad's comments after each recipe.


RED BEANS
2 Cups of Dryed Pinto Beans
1 Pound of Bacon or Salt Pork
3/4 Gallon of Water

Pick rocks, dirt and sticks out of the Dryed Pinto Beans.
Wash Beans in luke warm running water. Place cleaned beans in a gallon pot and cover with the 3/4 Gallon of water. Let stand overnight. The next morning Cut the Bacon or Salt Pork into small chips and dump it into the Pot of Soaked Beans. Place pot on a high burner and bring to a hard boil. Adjust burner to cook the beans at a slow bubbling Boil. Cover Pot with loose or cocked lid. Stir every 30 minutes and add water to keep the same volume in the pot. Beans should be soft and done in 3-4 hours. Salt to taste.

CHILI PEQUIN PEPPERS ADDS TEX-MEX FLAVOR.


MAMMA'S CORNBREAD
1 & 1\2 Cups of Yellow Cornmeal
1 Teaspoon of Salt
1 Teaspoon of Baking Powder
1 Heaping Tablespoon of Flour
1 Teaspoon of Sugar
1 Large Egg
2 Cups of Butter Milk

BEAT Egg and STIR into Butter Milk. MIX All Dry Ingredients Together and STIR it into the Butter Milk/Egg Mixture. MIX Well. POUR into a Dutch Oven or a 12 inch Cast Iron Skillet. BAKE in Dutch Oven with a 2 inch Layer of OAK Coals on the Bottom and a 3 inch Layer on Top for 20-30 Minutes until Yellow-Brown. Or BAKE in Skillet for 20 Minutes until Yellow/Brown in a Pre-Heated 450 degree Oven.

BUTTER IT AND COVER WITH RED BEANS!



TATER FRIED MEAT
3 lbs of Beef, Venison, Goat, Lamb,
Pork steaks or chops, Chicken or
Turkey parts (skinned)
3 Large Eggs
1 Pint of Milk
2 Cups of Flour
1 Large Bag of Potato Chips (recommend Lays Potato Chips)

Punch several small holes in the Potato Chip BAG with a steak knife. Crush the Potato Chips with a Rolling Pin while they are still in the bag. Crush until all chips are no larger than 1/4 inch Square. Place Crushed Chips in a clean medium pan/bowl. Pour milk in clean medium pan/bowl and beat in the 3 eggs. Pour Flour into a clean pan/bowl. Trim FAT from meat and if necessary cut into serving size pieces. Sprinkle meat with salt and pepper. Batter meat and cook it by using the following directions:
1. Roll the Meat in the Flour.
2. Dip it in the Egg-Milk mixture til wet.
3. Roll it in the Crushed Chips til covered.
4. Place in large skillet of hot grease to
fry to a Dark Golden Brown turning once.
